Rau Muong Xao (Fried Spinach)

 

Ingredients :

6 oz

1 tsp

1 tbsp

1

3 tbsp

1

1 1/2 tbsp

1

1 clove

Rump steak (trim any fat and sliced thinly)

Black pepper

Cornstarch

Large tomato (slice into thin wedges)

Oil

Medium onion (chop finely)

Fish sauce (nuoc mam)

Fresh spinach (rinse and cut each leaf into 3 pieces)

Garlic (crush)

Method :
  1. Combine with meat onion, 1/2 tsp pepper, 1/2 tbsp fish sauce and cornstarch

  2. Heat 1 1/2 tbsp of oil in a frying pan.

  3. Add remaining garlic and stir fry until fragrant

  4. Add spinach and stir fry for 3 minutes

  5. Add remaining fish sauce and tomato

  6. Stir fry 2 minutes, then  remove to a heated serving platter

  7. Heat remaining oil in frying pan

  8. Add meat and stir fry for 5 minutes

  9. Add 2 tbsp water if meat sticks to pan

  10. Remove meat from pan and sprinkle over spinach

  11. Sprinkle with pepper and serve
