Phô (Beef and Rice Noodles Soup)

 

Ingredients :

Dried rice noodles
Beef sirloin (or round steak) (partially freeze)
Beef stock
Fish sauce (nuoc mam)
Green onion (thinly sliced)
Onion (thinly sliced)
Coriander (shredded)
Hot chili sauce
Fresh bean sprouts
Lime (cut into wedges)

Fresh ground black pepper
Fresh basil leaves
Fresh mint leaves

Method :
  1. Soak the dried rice noodles in a bowl of warm water for 30 minutes, drain and set aside
  2. Slice the partially frozen sirloin or round steak against the grain into thin slices and set aside.
  3. Heat 4 cups of beef stock to a boil and add the fish sauce and black pepper
  4. Reduce heat and simmer
  5. In another saucepan, bring 4 quarts of water to a boil and drop the rice noodles into the water for 3 minutes
  6. Drain, then divide the noodles among 4 large soup bowls
  7. Divide the beef slices among the four bowls
  8. Ladle a portion of hot beef stock into each bowl (this will cook the meat)
  9. Garnish with the sliced green onions

    At the table, have an assortment of condiments available, including the sliced onions and coriander served in the hot chili sauce, basil and mint leaves, lime wedges, and bean sprouts
