Com Chien (Fried Rice)

Ingredients :

Vegetable oil

Chinese sweet pork sausages

Napa cabbage leaves (or any Asian greens) (thinly sliced)

Cooked long-grain rice (refrigerated overnight)

Egg

Soy sauce

Scallion (root end and tough green tops removed, thinly sliced into rounds)

Black pepper (freshly ground)

1. Quarter the pork sausages lengthwise and dice them
2. Heat the oil in a wok or large nonstick skillet over high heat
3. Add the sausages, scallion, and cabbage and stir-fry until the sausages render their fat, for about 3 to 5 minutes
4. Add the rice and continue to stir-fry and mix all the ingredients evenly
5. Add the egg and stir-fry quickly until the rice dries out completely, in about 10 minutes
6. Add soy sauce and season to taste with black pepper
7. Stir-fry an additional 5 minutes and serve
