Cha Trung (Ground Pork Omelet)

 

Ingredients :

1 lb

1 medium

4 cloves

1 tbsp

2 tbsp

Ground pork

Onion (chopped)

Scallions (finely sliced)

Garlic (chopped)

Nuoc mam (Vietnamese fish sauce)

Eggs

Cornstarch

Vegetable oil

Black pepper (freshly ground)

Method :
  1. In a large mixing bowl, combine the ground pork, onion, scallions, garlic and fish sauce and mix well
  2. Break the eggs over the mixture and combine gently (Do not beat the eggs)
  3. Add the cornstarch and ground pepper and fold in gently
  4. Heat the oil in a 9 inch nonstick omelet pan or skillet over high heat
  5. When the oil is slightly smoking, gently pour the pork mixture into the pan
  6. Reduce the heat to moderate
  7. Let the mixture cook without disturbing it for about 3 minutes
  8. When the edges turn brown, lift the edges of the omelet slightly with a spatula, so that the uncooked liquid gathered on top of the cake can run through to the bottom
  9. Cook the omelet for about 7 minutes longer, or until the bottom is firm and nicely browned
  10. Slide the omelet onto a large plate and place another large plate over the omelet and invert the omelet onto it
  11. Slide the omelet back into the skillet, uncooked side down, and cook for another 10 minutes
  12. Transfer the omelet to a serving platter
  13. Cut the omelet into 2 inch squares and serve with rice and Nuoc Cham
