Cha Lua (Pork Sausage)

Pork loin

Meat from small pig's head

Cooking oil

Wood ear mushrooms (finely chopped)

Eggs (beaten)

Limes (cut into wedges)

Shallots (diced)

Whole black peppercorns

Banana leaf (large)

Salted water

Garlic (crushed)

Sesame seeds (toasted)

Fish sauce

1. Boil pork and pig's head in salted water for about 20 minutes, then drain, de-bone and cut into small cubes
2. Heat oil in a large frying pan, cook shallots and garlic until soft
3. Add pork, mushrooms and peppercorns
4. Cook, stirring until mushrooms are soft and finish with sesame seeds
5. Remove from heat and stir eggs through pork mixture.
6. Place mixture on the banana leaf, wrap and tie with a string
7. Steam for 2 hours (above boiling water)
8. Unwrap and slice thinly.

Serve with fish sauce and lime wedges
