Caramel Shrimp

 

Ingredients :

1 1/2 tsp

1 clove

1 cup

2 tsp

3 tsp

1/2 lb

Peanut oil
Garlic (minced)
Water
Fish sauce (nuoc nam)
Sugar
Uncooked shrimp (shelled & deveined)
Spring onions (cut diagonally into 2-inch pieces)
Onion (cut into wedges)
Corn starch
Salt (adjust to taste)
Pepper (adjust to taste)
Coriander sprigs (for garnish)
Method :
  1. In a wok or large skillet, heat peanut oil over high heat until almost smoking and sauté garlic until golden
  2. Add 1/2 cup water, fish sauce and 2 tsp sugar and simmer until sugar is dissolved
  3. Remove from heat and set aside
  4. In a small skillet, cook remaining 1 tsp sugar over medium-high heat until sugar dissolves and turns golden
  5. Remove from heat add small quantities of water to the caramel, stirring until the caramel is dissolved
  6. Transfer caramel mixture to the wok and stir to mix
  7. Mix corn starch with 2 tbsp water to form a slurry and set aside
  8. Reheat the wok on medium-high
  9. Place raw shrimps in the reheated wok mixture
  10. Stir for about 2 minutes, until shrimps turn pink
  11. Drizzle the corn starch slurry into the wok, stirring until the sauce has thickened
  12. Season with salt and pepper to taste
  13. Serve hot with steamed rice, garnishing shrimp with coriander sprigs
