Bun Bo Hue (Beef Rice Noodle)

 

Ingredients :

Boiled rice noodle
Front pork leg
Ground pork
Citronella
Chilli powder
Onion
Tailbones of beef
Fillet
Beef
Ground shrimp (ruoc)
Lemons
Poireaux
Salt (adjust to taste)

Pepper (adjust to taste)

Nuoc mam (adjust to taste)

Monosodium glutamate (adjust to taste)

Spring onions

Some cashew nuts

Method :
  1. Cut the pork leg and the fillet into pieces then season them

  2. Slice the beef thinly and season it with onions, pepper, "nuoc mam" and monosodium glutamate

  3. Season the ground pork with flavorings

  4. Cut off the hard edge from the citronella, then beat it slightly to get bruised

  5. Saute the chilli powder in cooking oil to make the sauce

  6. Slice the onion and the poireaux

  7. Cut the lemon into 4 or 6 pieces each

  8. Boil 20 bowls of water in a big pan and put the fillet and pork leg in

  9. Add in the citronello and cook until the meat becomes soft and then season with flavorings and "ruoc" to have good soup

  10. Form the ground pork into balls (about 40 balls) then put them into the pan of boiling soup

  11. Saute some cashew nuts in hot cooking oil to have red colour

  12. Take the cashew nuts out then put the chilli powder

  13. Put the mixture into the pan of soup

  14. Some minutes before serving, put in the beef

  15. Put the rice noodle into bowls, then the meat

  16. Top with onion and spring onion

  17. When serving pour the soup in the bowls of rice noodle and adđ some pepper

  18. Arrange lemon, red pepper, chilli powder sauce and "nuoc mam" in small places or bowls beside the bowls of rice noodle
