Bo Kho (Spicy Beef Stew)

Ingredients :

2 lb

6 tbsp

1 large

2 tbsp

1 stalk

5 cloves

1 tbsp

Top round beef (cut into large cubes)

Cooking oil

Onion (finely chopped)

Sugar

Lemongrass (bruised)

Carrots (thickly chopped)

Annatto seeds

Garlic (finely chopped)

Curry powder

Star anise

Salt

Beer (optional)

Cinnamon stick

Red chilies (sliced)

Salt, pepper and lime mix

Method :
  1. Heat half of the oil with annatto seeds and stir quickly until the oil takes on the redish-brown color of the seeds
  2. Set aside, strain and remove the seeds.
  3. Marinate the beef cubes with onion, half the garlic, salt, sugar and half of the annatto seed oil mixture for  at least 45 minutes.
  4. Heat the remaining annatto seed oil and cook the remaining garlic until soft
  5. Add curry powder, beer and marinade
  6. Braise the beef, adding a little water, lemongrass, star and cinnamon
  7. Before the meat is tender, add carrots
  8. Simmer 3-5 minutes or until done.

Serve with garnish (1 cup mint leaves)
