Bo Cuon La Nho (Grape Leaf Beef)

 

Ingredients :

1/2 cup

1 medium

2 cloves

1 1/2 lbs

Lemongrass (finely minced)

Onion (chopped)

Garlic (finely minced)

Lean ground beef

Salt

Black pepper

Sugar

Oyster sauce

Cornstarch

Oil

Scallions (finely sliced)

Grape leaves (rinsed and spread out)

Bamboo skewers (soaked in water for at least 10 minutes)

Sweet and Sour Fish Sauce

Method :
  1. Using a mini food processor, finely mince lemongrass, onion and garlic

  2. In a large mixing bowl, knead together lemongrass mixture, ground beef, salt, pepper, sugar, oyster sauce, cornstarch, oil and scallions and set aside for 15 minutes

  3. Place 11/2 tbsp of filling on each grape leaf one inch from the edge nearest you

  4. Form a 2-inch-long sausage

  5. Fold inward both sides of leaf, and pressing down the mixture, fold over top of leaf and roll up

  6. Repeat with remaining beef mixture

  7. Thread three rolls on each bamboo skewer

  8. Barbecue beef skewers over hot coals or in a 400 degree oven, turning frequently for approximately 10 minutes until cooked through

  9. Serve with Sweet and Sour Fish Sauce as an appetizer, or with rice noodles as an entree
