 Beef Meatballs (Bo Vien)

Ingredients :

2 tbsp

1 tbsp

1 lb

2 tbsp

1 small clove

2 tbsp

1 tsp

1 tsp

Fish sauce

Sugar

Sirloin round (thinly sliced)

Vegetable oil

Garlic (peeled and minced)

Potato starch

Sesame oil

Baking powder

Freshly ground black or white pepper (adjust to taste)

Method
  1. Mix together the fish sauce, vegetable and sesame oils, and sugar until the sugar is completely dissolved
  2. Put in the garlic and stir and season with pepper
  3. Add the beef and pound it into the marinade until evenly coated
  4. Allow to marinate in the refrigerator for 1 hour
  5. Then transfer the meat to the freezer for further 1 hour
  6. Place the partially frozen beef in a food processor and pulse until ground
  7. Add the potato starch and continue pulsing until you have a smooth and firm paste, for about 5 minutes
  8. Add the baking powder and process for 1 minute more
  9. Bring a pot filled with water to a boil over high heat
  10. Take a well-rounded teaspoon of the beef and form it into a ball
  11. Carefully lower it into the boiling water
  12. Repeat this process until you have used up all of the paste
  13. Cook the meatballs until they float to the surface, about 5 minutes.
  14. Drain on paper towels
  15. Heat 1 tablespoon vegetable oil in a nonstick skillet over medium-high heat and lightly brown the meatballs until slightly crisp all over for about 3 minutes

                       Serve with chili and garlic sauce and hoisin sauce on the side
