Tod Mun Khao Pod (Thai Corn Fritters)
 


 

Ingredients

4 cups

1 1/2 cups

6 cloves

1/2 cup

1 tsp-2 tbsp

2 tbsp

1 tsp

1/2 tsp

1/2-3/4 cup

Corn kernels

Cornstarch

Garlic (minced)

Cilantro leaves and stems (optional) (minced)

Red curry paste (optional)

Fish sauce

Salt

Pepper

Water

Oil for deep frying

Method
  1. In a large bowl, crush corn kernels with hand to release their juices and make a sort of mash
  2. Mix in the rest of the first set of ingredients and stir to moisten the cornstarch well
  3. Stir in the water a little at a time to form a stiff batter that acts like wet sand
  4. Heat about 1inch of oil in a skillet till the oil shimmers (about 375 degrees F)
  5. Drop spoons full of fritter batter into oil
  6. Brown on first side, then turn and brown on second side, about 2-3 minutes per side
  7. Drain on paper towels
  8. Continue with all of the batter
  9. Serve on a platter lined with lettuce leaves
  10. Traditionally served with Cucumber Sauce
