Tod Mun Khao Pod (Thai Corn Fritters)
Ingredients |

Corn kernels
Cornstarch
Garlic
(minced)
Cilantro leaves and stems (optional)
(minced)
Red curry
paste (optional)
Fish sauce
Salt
Pepper
Water
Oil for deep
frying |
Method
-
In a large bowl, crush corn kernels with hand to
release their juices and make a sort of mash
-
Mix in the rest of the first set
of ingredients and stir to moisten the cornstarch well
-
Stir in the water a little at a time to form a stiff
batter that acts like wet sand
-
Heat about 1inch of oil in a skillet till the oil
shimmers (about 375 degrees F)

Drop spoons full of fritter batter into oil
-
Brown on
first side, then turn and brown on second side, about 2-3 minutes per side

Drain on paper towels
-
Continue with all of the
batter
-
Serve on a platter lined with lettuce leaves
-
Traditionally served with Cucumber Sauce
