Stir Fried Prawns with Oyster Sauce
Ingredients |

Raw prawns
Fresh lemongrass
Groundnut oil
Fresh chillies
(seeded and chopped)
Garlic
(coarsely chopped)
Shallots
(coarsely chopped)
Oyster sauce
Fish sauce
Sugar
Shrimp paste
Coriander
(chopped fresh)

Method
-
Peel and devein the prawns, discarding shells and rinse the prawns in cold water and
pat them dry with kitchen paper

Peel the lemongrass stalks to the tender whitish centre, crush them with the
flat of a knife, then finely chop
-
Heat a wok over a high heat until it is hot and add the oil and when it is very hot
and slightly smoking add the prawns and stir fry for 2 minutes
-
Remove with a
slotted spoon and set aside
-
Reheat the wok and add the lemongrass, chillies, garlic and shallots and stir
fry for 2 minutes
-
Return the prawns to the wok and add the oyster sauce, fish
sauce, sugar and shrimp paste and continue to stir fry for 4 minutes

Add the fresh coriander and stir
-
Serve at once with some plain rice and a green
vegetable
