Sour Chicken Curry
 

Ingredients

1 1/2 lb

3 tbsp (level)

1 tsp

2 tbsp (level)

2-3 tbsp

Chicken (hindmost)

Red curry paste

Salt (adjust to taste)

Fresh lime juice or tamarind paste

Fish sauce

Thai chile peppers or fresh jalepeno (optional)

Water

Method
  1. Cut-up chicken pieces into approximately 1 1/2 by 1 1/2 inch pieces
  2. Mix the curry paste with the 2 tbsp of water in a small bowl
  3. Add paste to 1 cup of water in a medium size saucepan
  4. Add the cut-up chicken pieces
  5. Add salt
  6. Add the tamarind, breaking into small pieces with your fingers
  7. Bring chicken to a boil over high heat until the chicken is cooked through, approximately 8-10 minutes
  8. Add the jalepenos cut in half or in thin long slices, with or without the seeds (seeds will make it spicy)
  9. Add fish sauce
  10. Cook 1 minute longer
