Pla Paad Khing (Stir-fried Snapper with Fresh Ginger)


 

Ingredients

1 lb

1x 1 inch

Snapper fillets (cut into bite size pieces)
 Fresh ginger (finely julienned)
Fresh red chillies (seeds removed, finely julienned)
Fresh green chillies (seeds removed, finely julienned)
Garlic (crushed)
Green onions (sliced fine)
Dried chinese mushrooms
Fish sauce
Sugar
Ground white pepper
Fresh coriander leaves (chopped)
Oil for cooking

Method
  1. Soaked in warm water for 45 minutes then slice the tops and discard the stems

  2. Heat oil and saute ginger and garlic until golden

  3. Add fish and mushrooms and cook over moderate heat until fish is almost cooked

  4. Add chillies, green onion, fish sauce, sugar and white pepper and cook for two more minutes, stirring well

  5. Serve garnished with coriander
