Ingredients

Grounded chicken
Green onion (sliced)
Red onion (cut in thin wedges)
Mint leaves (shredded)
Lemon juice

Grounded roasted-rice
Fish sauce (adjust to taste)

Method
  1. Heat a pan and put in one cup of rice, stir it back and forth until it is getting brown
  2. Use a coffee grounder to grind it to get grounded roasted rice        (Some like it fine while others may like it rough. The rough one could add texture to your laab)
  3. Stir the chicken in the hot pan until it is quite done and leave it cool down
  4. Mix the chicken with fish sauce and then add lemon juice, green onion, red onion, pepper, mint leaves and add fish sauce (or lemon juice to taste)
  5. Add the roasted rice powder
  6. Taste it one more time and add ingredients until it tastes right
  7. Eat with rice or sticky rice
