Jungle Curry


 

Ingredients

For Curry Paste

Fresh Thai red chili peppers (or serrano chilies)

Garlic

Lemongrass (sliced thin) (white part only)

Fresh galangal (or ginger) (peeled and chopped)

Red onion (coarsely chopped)

Salt

Ground coriander

For Curry

Vegetable oil

Baby sweet corn cobs (split lengthwise)

Red bell peppers (thinly sliced)

Fresh green beans (halved)

Fresh button mushrooms (halved)

Broccoli (cut into florets)

Vegetable stock

Dark soy sauce

Kaffir lime leaf (thinly sliced)

Brown sugar

Salt (adjust to taste)

Fresh cilantro chopped  (for garnish)

Thai red chili peppers (or serrano chilies) (sliced into rings) (for garnish)

Steamed rice (or cooked noodles)

Method
  1. Prepare curry paste by mixing in a food processor or blender
  2. Heat oil in a wok or deep skillet and add curry paste, cooking until fragrant
  3. Add vegetables, coating thoroughly with curry paste, and cooking until almost crisp-tender
  4. Add stock, soy sauce, lime leaves, sugar, and salt
  5. Cook until vegetables are done to your liking
  6. Serve garnished with cilantro and sliced chiles, over steamed rice or noodles
