Gy Pad Met Mamuang (Cashew Chicken)


 

Ingredients

2 tbsp

1 -1 1/2 lb

1-2 cloves

2 tsp

1/2 tsp

1/2 tsp

4 tbsp

2-3 tsp

3-4 tbsp

1 tbsp

1/2 tsp

1/2 - 1 cup

1 large

Oil

Chicken cut in bite-sized pieces

Garlic (minced or crushed)

Fresh ginger root (or 1/2 tsp ground ginger)

Red (cayenne) pepper

Ground coriander

Soy sauce

Fish (or oyster) sauce

Water

Lemon juice

Ground cumin

Roasted cashews (unsalted)

Onion (cut in ½ inch wedges) (or 8-10 green onions, cut diagonally)

Method
  1. Put oil in wok or large frying pan  and statute chicken for 2-3 minutes
  2. Add onion (or green onions), garlic and fresh ginger root (or ground ginger)
  3. Fry until onions are tender-crisp and chicken is cooked through, for about 3 minutes
  4. Add red (cayenne) pepper, ground coriander, soy sauce,  fish (or oyster sauce), water, lemon juice and ground cumin and fry 1 minute longer to blend flavors
  5. Add cashews and mix well, and serve immediately over white rice
