Goong Tod Grateum (Garlic
and Pepper Prawns with Leeks)
Ingredients |

Fresh tiger prawns
Leek (medium sized)
Garlic (chopped) (or more)
Black pepper (cracked) (or lots more)
Brown sugar
Fish sauce
Fresh coriander (chopped)
Vegetable oil for cooking

Method
-
Cut leek in half and soak in water to clean
and cut into 1 inch pieces and blanch for 1 minute in boiling water

Drain, then
arrange neatly to form a bed on a serving plate

Shell prawns, leaving tail intact, deveine prawns
(Or, alternately you can leave the shells on for that "finger licking good"
effect)
-
Heat oil in wok, stir-fry garlic and prawns until prawns are almost cooked
-
Add pepper, sugar and fish sauce
and stir-fry until prawns are cooked
-
Pour
prawns and sauce over leek and garnish with coriander
