Golden Prawn Fritters

Ingredients

750 gm

4 medium

1/2 cup

2

1 tbsp

2 cloves

1 tbsp

1/3 cup

1/2 cup

Fresh raw shrimps

Red chilies (finely chopped)

Fresh coriander leaves

Egg whites

Finely grated fresh ginger

Garlic (chopped)

Fish sauce

Rice flour or corn flour

Cooking oil

Chili sauce to serve

Method
  1. Peel and de-vein the shrimps
  2. Place the shrimp meat, chili, coriander leaves, egg white, ginger, garlic and fish sauce in a food processor and process for 10 seconds or until the mixture is well combined
  3. Transfer the mixture to a bowl and stir in the flour
  4. Refrigerate the shrimp mixture for at least 30 minutes or until you are ready to fry the puffs
  5. Heat the oil in a heavy-based frying pan
  6. Very gently drop rounded teaspoons of the mixture into the hot oil and cook for 2 minutes, carefully turning them with tongs until golden brown on all sides
  7. Drain the puffs on paper towels and serve immediately with chili sauce

  Note: Do not over process or overcook the mixture or it will become tough v
