Ginger Chicken (Gai Pad Khing)
 

Ingredients

3/4 bulb

Peanut oil

Garlic (chopped)

Chicken (cut into bite sized pieces)

Mushroom (sliced)

Ginger (grated)

Fish sauce

Dark soy sauce

Oyster sauce

Scallion/green onion (cut into 1" pieces)

Onion (chopped)

Thai chile peppers

Thai pepper powder

A pinch of sugar

Jalapeno peppers (optionally)

Scallions

Cilantro/coriander leaves

Method
  1. Mix the fish sauce, soy and oyster sauce ready for use
  2. Bring the oil to the smoking point in an adequately large wok
  3. Add the chicken and garlic, and stir fry until the chicken begins to change color
  4. Add the sauce and stir until it returns to a bubbling consistency
  5. Add the remaining ingredients
  6. Stir until the chicken is cooked
  7. Sprinkle Thai pepper powder over the dish
  8. Garnish with scallions, and some cilantro/coriander leaves

 boil over medium heat
