Gai Gup Kao Lad (Chicken with Chestnuts)


 

Ingredients

Garlic (chopped)
Cilantro roots
Black peppercorns
Jalapeño chile (seeded and chopped)
Vegetable oil
Boned chicken meat (cut into bite-sized pieces)
Chicken stock
Chicken livers (diced)
 Salt
 Palm sugar
Chestnuts (shelled, boiled, and halved) (or 1 can (8-ounce) water chestnuts, drained and halved)
Method
  1. In a food processor, puree the garlic, coriander roots, black peppercorns, and jalapenos into a paste
  2. In a wok, heat the oil and fry the paste, stirring, for 2 to 3 minutes
  3. Add the chicken pieces (not the livers) and stir-fry until they are just brown
  4. Pour in the chicken stock and add the livers
  5. Adjust the heat and simmer for 5 minutes
  6. Stir in the chestnuts, season with salt and sprinkle with palm sugar
  7. Cover and simmer until the chicken is tender, for about 5 minutes
