Gaeng Gai (Thai Chicken Curry)


 

Ingredients

Vegetable oil

Dried red chilies (crushed) (adjust to taste)

Yellow onion (chopped)

Garlic (chopped)

Ground galangal

Fresh lemon grass (chopped fine)

Fresh coriander (chopped)

Ground nutmeg

Kaffir lime leaves

Ground coriander seeds

Sugar

Fish sauce

Ground cumin

Salt

Shredded bamboo shoots

Coconut milk (frozen is better)

Fresh basil leaves (not dried basil)

Chicken breasts (skinned, boned and cut into 1/8 inch slices)

Method
  1. Heat the oil in a wok and stir-fry the chilies, onion, and garlic until light brown
  2. Add galangal, lemon grass, fresh coriander, nutmeg, lime leaves, cumin, ground coriander, sugar, fish sauce, and salt
  3. Cook for about 2 min. over medium heat
  4. Add the chicken and stir-fry for 1 minute
  5. Add the bamboo shoots and coconut milk
  6. Bring to boil, reduce heat and simmer about 10-15 minutes until chicken is tender
  7. Garnish with fresh basil, serve over rice                                         (This dish is even better if you refrigerate it overnight and reheat it the next day!)
