Bot Daek (Seafood Clay Pot)


 

Ingredients

Fish (or chicken stock)

Shallots  (sliced thin)

Fish sauce

Lime juice

Garlic (sliced thin)

Llemon grass (sliced thin diagonally)

Chillie paste

Lime leaves

Rock cod (or any firm white fish) (cut into 6 pieces)

Mussels (cleaned and debearded)

Prawns (shelled and deveined)

Scallops

Squid (cleaned)

Snow crab legs

Coriander leaves

Method
  1. Slice squid tubes into 1 inch rings and chop crab legs into 3 pieces each

  2. Bring stock, shallots, fish sauce, lime juice, garlic, lemon grass, chillie paste and lime leaves to a boil and add cod pieces and mussels

  3. Cover and boil over medium heat for three minutes, or until mussels open and meat starts to pull away from the shell

  4. Add the scallops and crab legs hen cover and boil for another 30 seconds

  5. Add prawns and squid and remove from heat and stir to mix

  6. Serve garnished with coriander leaves
