Vegetable Spicy Rice

Basmathi rice

Soup cubes

Carrots (chopped small)

Celery (sliced thinly)
Leeks (sliced thinly)
Bell pepper (sliced thinly)
Bombay onions (sliced thinly)
Tomato (quartered and sliced thinly)
Coriander leaves (chopped small)

Garlic (sliced thinly)
Turmeric
Curry powder
Chillie powder

Potato (peeled, washed, quartered and sliced thinly)
Cloves

Cardamoms
Vegetable cooking oil 
Salt (adjust to taste)
Water
Cinnamon

1. Heat a saucepan by adding oil
2. When the oil is hot add cinnamon sticks, cloves, cardamoms and washed rice and mix well
3. Add curry powder, turmeric powder, sufficient water, soup cubes and cook till the rice is done
4. Cut all the vegetables into 2 inch strips
5. Heat oil in a separate pan and add potato, garlic, onion, carrot, leeks, bell pepper and celery and cook for a while till the vegetables are cooked
6. Finally add coriander leaves
7. Arrange the rice on a platter and add the tempered vegetables on top of the rice neatly
8. Sprinkle with sauce and serve
