Tandoori Chicken (dry)

 

Ingredients

1

1 tsp

1 tsp

1 tsp

½ tsp

¼ oz

3 cloves

½ pint

1 tbsp

2  tsp

Chicken (cut into 8 pieces)

Chilli powder

Black pepper (grounded)

Curry powder

Turmeric powder

Ginger root (peeled and grounded to a paste)

Garlic (peeled and grounded to a paste)

Yogurt

Lemon juice

Sugar

Salt (adjust to taste)

Orange food coloring

Oil

Method
  1. Using a sharp knife cut regular slits through the skin and flesh of the chicken portions
  2. Rub with salt
  3. Mix together the chilli, curry powder, turmeric powder, pepper, ginger, garlic, yogurt, lemon juice, sugar and a few drops of orange food coloring
  4. In a large bowl or dish pour this mixture over the chicken portions, cover and set aside to marinate for 10-12 hours. (The longer it is left the better the results will be)
  5. Place the chicken portions on a flameproof tray and put then in a preheated oven at 200C for 30 to 40 minutes
  6. Turn them regularly and brush with oil occasionally

 Serve with a fresh crisp salad
