Sweet and Sour Chicken

 

Ingredients

1 kg

1 oz

1

1 clove

1 oz

1 oz

1 pt

3 tbsp

1 tbsp

1/2 lb

Chicken (cut into 6-8 portions)

Butter

Onion (finely chopped) 

Garlic

Corn flour

Tomato puree

Chicken stock

Arrack (or brandy)

Vinegar

Cherries

Tomatoes (skinned, seeded and diced)

Curry leaves

Salt (adjust to taste)

Pepper (adjust to taste)

Parsley

Method
  1. Season chicken portions with salt and pepper and saute in butter until golden brown on both sides
  2. Remove from pan, saute onion, parsley, garlic without coloring
  3. Add flour and cook for 2-3 minutes and remove from heat
  4. Add tomato puree and return to heat and gradually add the stock, arrack (or brandy), vinegar, and cherries
  5. Place chicken portions in casserole
  6. Pour over sauce and add curry leaves and seasoning
  7. Cook without lid for ¾ hr at 350 degrees F
  8. Add diced tomatoes, continue cooking for further 15 minutes (Correct seasoning and consistency)

Serve garnished with chopped parsley
