Small dried fish (dried anchovies) (optional)
Fresh curry leaves
Turmeric powder
Cumin powder
Fenugreek
Coconut milk
Tamarind juice
Tomatoes (quartered)
Potatoes (quartered)
Fresh red chillies
Shallots
Garlic
Onion (finely sliced)
Mustard seeds
Vegetable oil

Salt (adjust to taste)

Method
  1. Soak the dried fish in water for about 5 minutes and drain (optional)
  2. Grind to a paste fresh red chillies, shallots and garlic
  3. Add coconut milk to pot or wok on moderate heat
  4. Add 1 sprig fresh curry leaves, spices, paste, tamarind juice and tomatoes and mix well
  5. When mixture comes to a boil, add soaked fish (not for vegetarian)) and boil for 5 minutes while stirring continually
  6. In a separate heated wok, add oil,  1 sprig fresh curry leaves, onion, and mustard seeds for frying
  7. When onions are brown, pour mixture into pot with other ingredients and add potatoes and salt
  8. Simmer covered for 5 minutes and serve
