Smoked Spicy Chicken

Ingredients

Chicken

Salt

Wine

Sesame oil

Aniseed

Brown peppercorn

Clove

Cinnamon stick

Cardamom

Dried tangerine peel

Water

Sugar

Jasmine tea leaf

Soft brown sugar

Cooked rice

Light soy sauce

Method
  1. Wash chicken and remove its legs
  2. Rub chicken cavity and skin with salt and wine
  3. Hang it for 40 minutes
  4. Boil aniseed, brown peppercorn, clove, cinnamon stick, cardamom, dried tangerine peel, .water and sugar until 4 cups of water is left and strain
  5. Add light soy sauce and sugar
  6. Bring to the boil again
  7. Put chicken in spicy sauce and simmer over low heat for 20 minutes
  8. Cover wok with aluminum foil
  9. Put in tea leaf, soft brown sugar and rice and heat wok
  10. Place an iron rack on wok
  11. Put chicken on rack and cover with lid
  12. Remove from heat when smoke emits from wok
  13. Bake for 5 minutes and take out chicken
  14. Brush sesame oil on it and allow to cool
  15. Cut up and serve
