Shredded Chicken Fry

 

Ingredients

1 large

1 tbsp

Green chillies (seeded and roughly chopped)

Garlic (peeled)

Fresh ginger root (peeled)

Onion (peeled and roughly chopped)

Vinegar

Ground cumin

Black pepper  (freshly ground)

Ghee (or 3 tbsp oil )

Green peppers (cored, seeded and sliced)

Lemon juice

Chicken (or 4 chicken breasts) (skinned, boned and shredded)

Salt (adjust to taste)

Method
  1. Grind the green chillies, garlic, ginger, onion and vinegar to a paste
  2. Place the shredded chicken and the paste in a large bowl or dish, mix thoroughly then cover and set aside for 1 hour to marinate
  3. Add the cumin, pepper and salt to the marinated mixture and mix well
  4. Heat the ghee in a large pan add the chicken, cover and fry over a gentle heat for 15-20 minutes
  5. Uncover the pan and add the sliced green pepper
  6. Fry for a further 10 minutes or until the mixture is fairly dry and the chicken is cooked

Sprinkle with the lemon juice before serving
