Saffron Rice

 

Ingredients

1/2 cup

2 tsp

1 tsp

3 1/4 cup

1/4 cup

1 cup

1 tbsp

2 oz

4 whole

1/2 cup

Green chile (skinned, seeds removed & chopped fine)

Fresh ginger (peeled and chopped fine)

Black mustard seeds

Water

Saffron

Long-grain rice (rinsed well)

Butter

Unsalted cashew nuts

Cloves

Lime juice

Salt (adjust to taste)

Method
  1. Pour 1/4 cup boiling water over the saffron and let soak for 10 minutes
  2. Heat the butter until very hot, add the ginger, mustard seeds, cashews, and cloves and fry the mixture. stirring constantly, until the seeds begin to burst
  3. Add the chile, lime juice, rice, and the remaining cup of boiling water and stir well
  4. Pour the saffron water over the mixture and bring to a boil, stirring once
  5. Cover the pan tightly and bake at 350 degrees F for 20 minutes or until the liquid has been absorbed and the rice is tender
  6. Fluff with a fork before serving
