Potato Curry (Kulambu)

 

Ingredients

1-2 tbsp

Large potatoes (peeled, washed and chopped into cubes)
Large onion (chopped length wise)

Green or red (dried) chillies
Fenugreek

Oil

Curry powder (adjust to taste)

Curry leaves (if available)
Salt (adjust to taste)

Milk (optional)

Tamarind water (optional)

Lemon juice (optional)

Method
  1. Heat the oil in a wok or a saucepan and add fenugreek first followed by onions (Fenugreek goes brown very fast )

  2. Add chillies and curry leaves, fry till golden

  3. Add potato fry for 2 minutes

  4. Add salt and chilli powder fry for another minute

  5. Then add water to cover the potatoes

  6. Let it cook for about 10 minutes while stirring in between (Taste test the salt)

  7. Once the potatoes are cooked stir well and the curry is ready
    (At this stage add milk or coconut milk to make more gravy. Can also add tamarind water or lemon juice to finish it off)
