Kehel Muwa Seeni Sambol (Banana Flower Curry)

 

Ingredients

1 large

Kehel muwa (banana flower)
Red chillie (crushed)
Cardamoms (chop finely)
Cloves (chop finely)

Maldive fish (chop finely and crushed)

Curry powder (roasted)

Sugar

Tamarind pulp

Tiny pieces of lemon grass (chop finely)
Salt (adjust) to taste
Pinch of saffron powder

Curry leaves

Method
  1. Finely chop the Kehel Muwa and soak it in salt water

  2. Add a bit of saffron powder into it to give a nice colour

  3. Remove the Kehel Muwa from salt water and squeeze well to remove any additional water in it

  4. Warm 3 tbsp of oil, add curry leaves plus crushed or chopped finely spices and stir couple of times

  5. Add the Kehel Muwa into it and mix well

  6. Add the rest of curry powder, salt, saffron and sugar and cook in low fire

  7. Once it is cooked add tamarind pulp and mix well                          (That way you can keep it in the fridge for months)
