Idiappam
(String Hoppers)
Ingredients |

500 gm
220 ml
1 1/2 tsp
|
Rice flour
Boiling water
Salt
|
Method
-
Warm the rice flour in a low
oven, then sieve into a bowl
-
Add salt, then slowly add
hot water and work into a soft dough
-
Place the dough into a
string-hopper or vermicelli press and press the handle to squeeze small,
flat noodles patties onto hopper mats
-
Place the mats in a steamer,
or large pot with a trivet at the bottom and sufficient water to just
reach the trivet's rung
-
Steam until strings are
fully cooked and springy in texture, about 10 minutes

Remove string hoppers from
the steamer
Serve hot with
soti
or sambals or
curries |
