Dry Mixed Vegetable Curry

 

Ingredients

1-1 1/2 oz

1 small

1 tsp

2 tbsp

1/2 tsp

1 sprig

2-3

1/2 pt

1 lb

Ghee (or 2-3 tbsp oil)

Onion (peeled and chopped)

Chilli powder

Ground coriander

Turmeric

Curry leaves

Tomatoes (skinned and chopped)

Water

Diced mixed vegetables (e.g. potatoes, carrots, swede, peas, beans, cauliflower)

Salt (adjust to taste)

Method
  1. Heat the ghee in a pan and gently fry the onion and curry leaves until light brown
  2. Alternatively fry the cumin seeds until they crackle
  3. Add the diced vegetables and stir in the chilli powder, coriander, turmeric and salt and fry for 2-3 minutes
  4. Add either the chopped tomatoes or the lemon juice
  5. Stir well and add only a little water if a dry vegetable curry is preferred
  6. Cover and cook gently for 10-12 minutes until dry
  7. For a moister curry stir in ½ pint water before covering and simmer for 5-6 minutes until the vegetables are tender

Serve with rice or chappatis or nan or idiappam
