Dried Shrimp Sambal

Ingredients

Dried shrimp
Desiccated coconut
Chopped red chillies (or sambal ulek)
Onions (chopped)
Garlic (chopped)
Lime (or lemon) juice
Salt (adjust to taste)

1. Floss prawns in a blender or food processor
2. Put desiccated coconut in a dry frying pan and toast, stirring constantly, until a rich brown colour
3. Immediately turn out onto a plate to cool
4. Blend chillies, onion, garlic, lime juice and salt to a smooth purée in a blender, add coconut and blend again, adding a little water if necessary to produce a smooth paste
5. Add shrimp floss and blend again, scraping down sides of goblet with a spatula
6. Serve as a relish with rice and curries
