Crab in Red Sauce

Crabs shelled (cleaned and well washed, cut in half with claws attached)

Oil

Garlic (crushed)

Spring onions (shredded)

Ginger (finely chopped)

Red chillies (finely cut)

Oyster sauce

Light Soya sauce

Coriander leaves (chopped)

Sugar

Tomato puree

Chicken stock or water

Corn flour
Salt (adjust to taste)

1. In a large pan heat oil and fry ginger and garlic
2. Add the crabs and cook for 10 minutes, turning it to cook evenly
3. Add the sauces, stock, tomato puree and rest of the ingredients and cook for further 5 minutes
4. Dissolve the corn flour in a table spoon of cold water and add to the sauce to thicken it
5. Finally add the spring onions and coriander leaves
