Chicken Pillau

 

Ingredients

Basmati or suduru samba rice

Chicken

Red onions

Rampe

Peppercorns

Cardamoms

Salt

Cinnamon

Garlic

Onion (chopped)

Green peas

Cadjus

Sultanas

Eggs (hardboiled) 

Ghee or butter

Lime

Method
  1. Marinade the chicken in the juice of  lime and  salt for 1/2 hour
  2. Wash chicken and put it whole into a saucepan
  3. Add the red onions, rampe, pepperconrs, salt, cardamoms, cinnamon and sufficient water to boil the chicken
  4. When the chicken is tender take it out and leave aside
  5.  Temper the chopped onions and garlic in 1 tbsp ghee
  6. Add washed and drained rice and fry 3-5 mins
  7. Pour in sufficient chicken stock and water to cook the rice until done
  8. Saute the cadjus and sultanas in a little ghee
  9. Cut the chicken into small pieces and temper with the cadjus and sultanas
  10. Lastly mix in the rice
  11. Decorate with green peas and hardboiled egg

Serve with fresh prawns and mango dry fish achcharu, fish Vindaloo and tomato kutcha
