Chicken Pillau
Ingredients |

Basmati or suduru samba rice
Chicken
Red onions
Rampe
Peppercorns
Cardamoms
Salt
Cinnamon
Garlic
Onion (chopped)
Green peas
Cadjus
Sultanas
Eggs (hardboiled)
Ghee or butter
Lime |
Method
- Marinade the chicken in the juice of lime and salt for
1/2 hour
- Wash chicken and put it whole into a saucepan
- Add the red onions, rampe, pepperconrs,
salt, cardamoms, cinnamon and sufficient water to boil the chicken
- When the chicken is tender take it out and leave aside
- Temper the chopped onions and garlic in 1 tbsp ghee
- Add washed and drained rice and fry 3-5 mins
- Pour in sufficient chicken stock and water to cook the rice until
done
- Saute
the cadjus and sultanas in a little ghee
- Cut the chicken into small pieces and
temper with the cadjus and sultanas
- Lastly mix in the rice
- Decorate with green peas and hardboiled egg
Serve with fresh prawns and mango dry fish achcharu, fish Vindaloo and tomato kutcha |
