Butter Chicken
Ingredients |

Chicken (cut into 8 pieces)
Lemon juice
Green chilli (seeded and roughly chopped)
Fresh ginger root (peeled)
Small garlic (peeled)
Yoghurt
Paprika
Chilli powder
Unsalted butter
Soured cream
Butter (melted)
Salt (adjust to taste)
Orange food coloring |
Method
- With a sharp knife make regular slits through the skin and flesh of
the chicken portions
- Rub with salt, then sprinkle with the lemon juice
- Grind the green chilli, ginger and garlic to a fine paste
- Mix this paste with the yogurt, paprika, chilli powder and a few
drops of orange food coloring
- Place the chicken portions and the spice mixture in a large bowl or
dish, cover and set aside for 4-5 hours to marinate
- Remove the chicken portions, place them in a greased baking tray
- Cook in a preheated oven for 45-50 minutes
- Brush the portions with a little melted butter occasionally
- Melt the unsalted butter in a saucepan, add the remaining marinade
and the soured cream
- Gently heat, without boiling for 5-6 minutes
- Pour the sauce over the baked chicken and serve
