Annasi Curry (Pineapple Curry)

 

Ingredients

1 can

1 small

1-2

1 tsp

1-2 tsp

1-2 inch piece

4 medium cloves

Few

Pineapple tit-bits (or small fruit cut into bite size pieces)
Onion sliced
Hot green peppers (sliced)
Maldive fish pieces (or dried anchovies)
Raw curry powder
Turmeric
Ground black mustard
Cinnamon
Garlic (crushed)

Ginger root (crushed)
Coconut milk (or fresh milk)
Vegetable oil

Sugar (adjust according to taste and the pineapple used)

Curry leaves

Rampe
Salt (adjust to taste)
 

Method
  1. Drained the pineapple an keep the drained juice separately
  2. Heat oil in saucepan
  3. Add crushed ginger and garlic, curry leaves, rampe, cinnamon, sliced onions and green peppers
  4. Keep mixing the ingredients until the onions are soft
  5. Add salt, turmeric, raw curry powder, ground mustard and Maldive fish (or dried anchovies)
  6. Mix all the ingredients well and add pineapple pieces
  7. Keep mixing the pineapple pieces until well coated with the spices
  8. Reduce heat and allow to simmer for few minutes
  9. If using canned pineapple add 1/2 of the drained juice
  10. Allow to simmer for few more minutes longer
  11. Add the sugar, mix well and adjust salt
  12. Taste and if necessary add a little lime juice (depends on the pineapple used)
  13. Add 1/4 cup coconut milk (or fresh milk)
  14. Let simmer for a little while and take off heat
