                                RECIPES OF SINGAPORE

Stewed Sea Cucumber

 

Ingredients

450 gm

300 gm

225 gm

2 cloves

2 sprigs

2 slices

Sea cucumber (soaked)

Broccoli

Pork (or beef) spare ribs

Shallots (grated)

Spring onions (sectioned)

Ginger

For sauce:

1/2 tbsp

1/2 tsp

Light soy sauce

Corn flour

For marinate:

1 tbsp

1 tsp

1/3 tsp

1 cup

1/2 tsp

1 tsp

Dark soy sauce

Granulated sugar

Salt

Water

Wine (or dry sherry)

Sesame oil

Method
  1. Mix well all the marinate ingredients

  2. Cut spareribs into chunks, wash and marinate

  3. Bring water with spring onion and ginger to the boil and stew sea cucumber then wash and cut into chunks

  4. Finely cut and wash broccoli blanch in salted water with oil and set aside

  5. In the inner pot heat 2 tbsp of oil and stir fry shallot until fragrant

  6. Add sea cucumber and spareribs and stir fry for a while then sizzle wine

  7. Add remaining marinate and sauce

  8. Bring to the boil and cook for 5 minutes

  9. Transfer the inner pot to the outer one and cook for 20 minutes

  10. Mix with sesame oil and broccoli
