                                RECIPES OF SINGAPORE

Spicy Singapore Prawns
 

 

Ingredients

1 package

1 cup

1/4 cup

Bean thread noodles (6 oz)
Rice vinegar
Sugar
Water

Canola oil
Large raw shrimp (peeled and deveined)
Garlic (minced)
Green onions (white part only) (minced)
Red pepper flakes (adjust to taste)
Dry white wine
Rice vinegar
Soy sauce
Fresh cilantro (minced)

Method
  1. Combine rice vinegar, sugar, water  and stir until sugar completely dissolves to marinate
  2. Combine wine, rice vinegar, soy sauce and cilantro.
  3. Cook bean thread noodles in a large pot of gently boiling water until tender, for about 5 minutes
  4. While noodles cook, microwave marinade in a large bowl until very hot but not boiling
  5. Drain cooked noodles and add to marinade, tossing to coat and  set aside to marinate, keeping warm
  6. Heat canola oil in a large stir-fry pan or skillet over high heat and add shrimp and sauté 1 minute
  7. Add garlic, green onions and pepper flakes and sauté 1˝ minutes longer
  8. Add wine mixture and bring just to a boil
  9. Turn off heat and adjust seasoning, adding more soy sauce or pepper flakes if desired
  10. Thoroughly drain warm noodles, discarding marinade
  11. Divide noodles among 4 pre-warmed shallow bowls and arrange shrimp on top of noodles, spoon sauce over and serve immediately.
