                                RECIPES OF SINGAPORE

Spicy Pumpkin

 

Ingredients

1/2 cup

1 small

1 large

5 cloves

4 slices

2 tbsp

1/2 cup

1 tbsp

1 cup

Small prawns (shelled)

Pumpkin

Onion (sliced)

Garlic (sliced)

Ginger

Curry powder (made into paste) (adjust to taste)

Low fat yoghurt

Cooking oil

Water

Salt (adjust to taste)

Method
  1. Cut pumpkin into large chunks
  2. Saute garlic, onion and ginger in oil
  3. Mix in curry paste and stir till fragrant
  4. Add chunks of pumpkin and water and simmer for 15 minutes or till soft but not mushy
  5. Finally add in yoghurt and prawns, simmer for another 5 minutes
