Pork and Green Beans in
Dark Sauce
Ingredients |

1 lb
1/2 lb
1 tbsp

4 tbsp

Green beans (both ends removed and left whole)
Lean ground pork
Corn starch
Shallots (sliced finely)
Garlic (chopped)
Red chillies (seeded and sliced finely)
Dark soy sauce
Light soy sauce
Sugar
Vegetable oil for cooking
Salt (adjust to taste)
Pepper (adjust to taste)

Method
- Marinate pork with corn starch and light
soy sauce for 15 minutes
- Heat 3 tbsp oil in wok
- When hot, add green beans
- Stir once and cover wok for 2 minutes to
lightly cook and brown beans
- Remove cover and stir fry for another
minute to further crisp the beans
- Remove and set aside on paper towel to
drain excess oil
- Heat remaining oil in wok and add
shallots and garlic and fry till lightly brown
- Add ground pork and chillies and fry
till cooked.
- Add beans, dark soy sauce, sugar and
pepper and mix well
