Paper Bag Baked Chicken

 

Ingredients

3 1/2 to 4 lb

Whole chicken

Large onion (peeled)

Lemon (sliced with peel)

Vegetable or olive oil

Salt (adjust to taste)

Freshly ground pepper (adjust to taste)

Large clean brown paper bag

Method
  1. Clean chicken inside and out and thoroughly dry

  2. Preheat oven to 450f. degrees

  3. Brush or rub oil over the outside of chicken

  4. Distribute the salt and pepper evenly inside and out

  5. Place the whole, peeled onion and lemon slices inside the cavity of chicken

  6. Place chicken into brown paper bag

  7. Place bagged chicken into a baking dish

  8. Make sure paper bag is rolled up tightly and tucked underneath chicken

  9. Place chicken into oven and bake for 1 hour

  10. Reduce heat to 350f degrees and continue baking for 1 hour

  11. Remove chicken and let set undisturbed for 10 minutes before serving to allow juices to be reabsorbed

 Serve cooked onion with the chicken, or discard as you prefer
