Oysters in Egg Omelette

 

Ingredients

8 tbsp

2 cups

1 tbsp

12-15

1 tsp

3 medium size

1 bunch

Sweet potato flour (or flour from China)

Water

Garlic (finely chopped)

Fresh baby oysters

Fish sauce (adjust to taste)

Eggs

Coriander (chopped) (for garnishing)

Chillies (sliced) (for garnishing)

Chillie/garlic sauce (for dipping)

Method
  1. Dissolve flour in water, and mix well

  2. Fry garlic in oil till fragrant then stir in dissolved flour and continue to stir (don't stop)

  3. When it's hardened and somewhat brown, add in eggs and scramble

  4. Mix cut vegetables with cooled sauce and black shrimp paste in large mixing bowl

  5. Sprinkle in fish sauce making sure you hear the sizzling sound

  6. Add oysters

  7. Garnish with coriander and chillies, and set aside a bowl of chilli and garlic sauce for dipping
