Ground turmeric

Oil

Ground black pepper

Garlic (crushed)

Water

Fresh red chilies (seeded and sliced)

Chicken (cut into serving pieces)

Onions (thinly sliced)

1. Combine garlic, salt, turmeric, pepper and rub well into chicken

2. Heat oil in a large saucepan and gently fry half the sliced onion until brown

3. Remove onion from pan and set aside

4. Fry remaining onion and chilies until just starting to color, then add chicken to pan and fry until golden all over

5. Add water, cover and simmer gently until chicken is tender

6. Uncover and continue to simmer, allowing any liquid remaining in pan to evaporate

7. Serve hot, garnished with the reserved fried onion and accompanied by fried potatoes or ghee rice
