                                RECIPES OF SINGAPORE

Ayam Panggang (Singapore Barbecue Chicken)

 

Ingredients

4 cloves

1 inch slice

1 tbsp

Garlic
Ginger (peeled)
Fresh lime juice
Chicken breasts (skinless and boneless)
Dash of salt

Barbecue Hot Sauce:

Bird chiles
Onions (peeled and quartered)
Garlic (peeled)
Tomatoes (cut into quarters)
Olive oil
Lime juice (freshly squeezed)
Sugar
Salt (adjust to taste)

Pepper (adjust to taste)

Method
  1. Mince 4 cloves of garlic and ginger, mixing them together in small bowl and pour in 1 tbsp lime juice

  2. Rub mixture onto raw chicken breasts and sprinkle lightly with salt and set aside

  3. To prepare Barbecue Hot Sauce: Place chiles, onions, garlic and tomatoes into steamer and cook 5 minutes

  4. Peel tomatoes and place steamed vegetables into a blender, and chop coarsely

  5. Heat oil in skillet and add chopped vegetables

  6. Sauté over medium heat for about 5 minutes to allow sauce to reduce

  7. Add lime juice, sugar, salt and pepper to cooked sauce

  8. Marinate chicken breasts in Barbecue Hot Sauce for 30 minutes

  9. Place chicken over charcoal or indoor grill

  10. Top with thin layer of Barbecue Hot Sauce and cook on one side, turn, cover the cooked side with sauce and finish grilling

  11. Serve with steamed rice

    (For extra spicy chicken, garnish with lime wedges and leftover sauce)
