Stuffed Chicken

 

Ingredients

2-1/2 to 3 lbs

1/4 cup

Chicken

Salt for cleaning
Soy sauce
Lemon juice
Eggs (full  boiled & halved)
Vienna Sausage

Ground pork

Ground beef

Chorizo de Bilbao (Spanish sausage) (chopped finely)

Sweet pickle relish

Eggs (lightly beaten)

Raisins

Ketchup

Seasoned bread crumbs

Frozen sweet peas (thawed)

Salt (adjust to taste)

Pepper (adjust to taste)

Method
  1. Debone chicken for stuffing

  2. Rub skin with salt and wash off with water

  3. Marinate in soy sauce and lemon juice

  4. Set aside but turn chicken at least 2 or 3 times while preparing remainder of ingredients

  5. Mix ground pork, ground beef, chorizo de Bilbao, sweet pickle relish, eggs, raisins, ketchup, bread crumbs, sweet peas, salt and pepper thoroughly for stuffing

  6. Fry a tablespoon of mixture and taste

  7. Add salt and pepper to taste

  8. Stuff chicken with mixture

  9. Arrange halved eggs and sausage in center and sides alternately

  10. Sew up opening

  11. Re-shape chicken and place in baking pan breast side up

  12. Arrange legs and wings correctly

  13. Loosely cover pan with aluminum foil

  14. Bake in 350 degree oven for 1-1/2 to 2 hours or until "cake test" is passed

  15. Baste with marinate mixture 3 times during cooking

  16. Check color when almost done

  17. Remove foil if necessary and continue baking until brown

  18. Cool and slice before serving
