Ingredients

Whole chicken (cut into serving pieces)
Pork lard
Root ginger (cut into strips)
Fish sauce (patis)
Lemon grass (or essence
Chilli leaves |
Method
- Heat lard
in a heavy saucepan (with cover)
- Sauté ginger strips and add chicken
pieces and cook until light brown
- Add fish sauce, cover and lower heat
- Allow fish sauce to be absorbed being
careful not to get dry
- If
chicken is still not tender, add chicken stock
- When tender, add chilli
leaves and continue cooking for 2 more minutes
- Serve hot
