Pancit Miki (Noodles with Bean Sprouts)

 

Ingredients

1/2 lb

1 cup

Miki (or Chinese egg) noodles (flat, wide noodles)
Vegetable (or corn oil) (to be used a little at a time)
Dried Chinese mushrooms
Egg (slightly beaten)
Lean pork (cut into serving strips)
Cornstarch
Patis (or salt)
Bean sprouts
Soy sauce
Chicken stock

Method
  1. Cook noodles according to package directions

  2. Stir in 1 tbsp vegetable oil to keep the noodles from sticking together and set aside

  3. Soak mushrooms in water for about 30 minutes and when they are soft and expanded, drain and slice the mushrooms thin and set aside

  4. Fry the egg and cut into strips and set aside

  5. Coat the pork strips with cornstarch and patis (or salt)

  6. In a medium skillet, heat 2 tbsp of oil and stir fry the pork strips and add bean sprouts, mushrooms, soy sauce and chicken stock, stirring occasionally

  7. In another large skillet, heat the rest of the oil and add the noodles and fry on both sides, turning them once

  8. Drain on absorbent paper

  9. Transfer the noodles to a serving platter

  10. Pour the meat-vegetable mixture on top

  11. Garnish with egg strips and serve hot
